La estereotomía se define como el arte de labrar las piedras para las construcciones. Cabe añadir que no se cierra simplemente al tratamiento y corte de la piedra, sino que puede aplicarse a otros materiales, tales como la madera o el hierro. Su origen se remonta a Edad Media, época desatacada por la importancia de los canteros en las construcciones. Tratado práctico de Estereotomía de Francisco Ponte y Blanco recoge todas las maneras de tratar estos tres materiales, desde su aplicación en bóvedas, muros, ensamblajes, vigas etc. Además, ofrece un repaso histórico por diferentes estilos arquitectónicos, desde el Antiguo Egipto hasta la arquitectura moderna, haciendo especial hincapié en la Edad Media europea y en el Renacimiento, donde tanto se desarrolló y popularizó la cantería.
